Rhubarb is back in season!
Who doesn't love rhubarb? It always reminds me of my grandmother and English Country Gardens!
A rhubarb compote (stewed rhubarb) is versatile, delicious and healthy. I'm using mine to create different layered desserts with a variety of things from my fridge. Once you've made the compote the rest is simple as it is just a matter of layering what you have and then refrigerating!
Cut the rhubarb into inch pieces and put in a pan with ½ a cup of sugar and the juice of half an orange. Simmer until the fruit is stewed (about 15/20 mins). I love to create different desserts from layers in a small dessert glass. This way you can see the layers and the amount is small enough to just give you a few spoons of dessert at the end of a meal.
