Delicious and Easy Chicken with Plums for all the family

This recipe is one I made up last week, when I went to the supermarket and found plums were back on the shelves. I always use chicken thighs as they hold the flavor so well and don't dry out. If your children don't like chili, then leave it out, although just a little is hardly decetable and adds a delicious edge to the flavors.


  • one chicken thigh per person

  • one plum per person, halved and stone removed

  • soy sauce, about 2 cups

  • 3 garlic cloves chopped

  • one fresh chili chopped (or chili powder)

  • fresh ginger grated (or powdered ginger)

  • fresh cilantro to garnish

Place the chicken thighs in an oven tray and bake at 375F for 20 minutes. Add the chili, ginger and garlic and bake for a further 10 minutes. Next add the plum halves (I nestle two halves under each thigh) and liberally add the soy sauce. Bake for a further 10/15 minutes. Remove from oven and rest for 10 minutes. During this time you can cook some noodles to accompany and a green vegetable if you want. Garnish with fresh cilantro to serve.
