Trade Secret - Easy, Delicious, Light, Lemon Mousse

Ok so now I really am sharing my deepest secrets...

This lemon mousse is the perfect end to a meal - sharp, light and clean and so, so simple to make. No cooking at all. I can do it in less than 10 minutes from start to finish. Plus it is best made in advance.

Please only share this recipe with your nearest and dearest (it should be a State Secret!)

Necessary Ingredients (for six)

  • ¾ cup of sugar

  • grated zest and juice of 2 lemons

  • 1 pint of whipping cream

That's it for the necessary ingredients. Simple. The rest is all up to your imagination. The best thing about this recipe is that (almost) anything goes. Let your creative juices fly. You really can't go wrong. If you are really not feeling creative, well then just stick to the original recipe.

Whip all of the above (necessary) ingredients together in one bowl, until the cream is thick. Spoon (or pipe using a zip lock bag with the corner cut out) into separate wine / champagne glasses. Chill and serve.

Optional for a personal variation...

  • Ginger biscuits / fresh grated ginger / vodka

  • Mint leaves / raspberries / pomegranate seeds to garnish

You can vary what you put in with it and in how many layers.

I particularly like:

  • crushed ginger snap biscuits

  • fresh grated ginger

  • pomegranate seeds (steeped in vodka!)

Enjoy! And just don't admit to your guests quite how easy this delicious mousse is to make.
