Nothing in the fridge for dinner? Look in your Freezer!

I was like Mother Hubbard last night, my fridge was bare but I was determined to make a winning family dinner with what I could find in my freezer. Here is what a found!

Firstly I decide that I am going to make a pie... so I make the pastry. 5 minutes in the food processor and it's done.

Pie Crust

  • 3 cups of all purpose flour

  • 1 tsp salt

  • 2 sticks chilled butter

  • approx 8 tablespoons of cold water

Pulse the flour and salt for a few seconds in the food processor and then add the diced, chilled butter. When it starts to look like flakey breadcrumbs add the cold water slowly until the dough forms a whole ball around the blade. Divide the dough up into 2/3 (pastry bottom) and 1/3 (pastry top), cover in cling film and chill.

So I know I'm making a pie but what will I make my filling out of? I know my fridge is virtually bare so I look in my freezer and find frozen scallops and shrimps, which I take out to defrost. (I always keep frozen shrimp in my freezer as they are so versatile). I also find some frozen peas and corn that I will use. I think this will be delicious in a creamy, white sauce with some onions and I even found a few lone slices of pancetta in the back of the fridge that will be perfect with the scallops.

So for my pie filling, I sauté an onion sliced up with the pancetta and add some heavy cream that I have in the fridge. A generous amount of salt and pepper and either some tarragon or a pinch of nutmeg (not both) depending on what you have in your cupboard. If I have a bottle of white wine open, I will also throw in a glass of white wine.

I line my pie tin with the pastry and blind bake it for 20 minutes before adding the onion, pancetta and cream mix. I then add my defrosted prawns and scallops (quartered) and some frozen peas and corn. I then add the piecrust lid, sealing it with a beaten egg and finally I wash the top with the remaining beaten egg. I prick the pastry a couple of times with a fork so the steam can escape and I cook at 375F for 45 minutes.
